Moroccan Pomegranate Glazed Sweet Potatoes

Ingredients

Two large sweet potatoes cut into cubes

1/4 C olive oil

1/4 C honey

Fresh thyme about 2 sprigs

3T pomegranate molasses

1 Pomegranate

Procedure

Preheat oven to 400 degrees. Line a baking dish with tin foil. Mix sweet potatoes, herbs, salt and pepper, olive oil, and honey in a large bowl. Transfer to the baking dish and bake for 45 minutes.

Remove from oven, and place in serving dish. Drizzle with pomegranate molasses, and pomegranate seeds.
