Oatmeal Bread

Ingredients

1 package yeast

1/2 C lukewarm water

Let these first two ingredients dissolve together then add:

1/2 C flour, let this mixture stand for 20 minutes

Combine the following 2 ingredients and then let cool:

1/2 C rolled oats

3/4 C scalded milk (heat milk till bubbles around the edges)

1/4 C honey

2 tsp salt

1/2 C whole wheat flour

1 3/4 to 2 C all purpose flour

Procedure

Add honey, yeast mixture, salt and flours to the cooled to lukewarm milk mixture. If dough is sticky add flour until dough can be formed. Knead 10 minutes - dust with flour and put bowl in a warm place. Let dough double (2 hours). Press air out and shape into a loaf. Place dough in greased bread pan seam side down and let double again about 1 hour. Bake at 375 degrees for 25-30 minutes. Brush with melted butter and cool.
