Bailey's Irish Cream and Pistachio Fudge

Ingredients

makes one 9x9 square pan

36 oz white chocolate chips

1 14-ounce can sweetened condensed milk

1/2 cup plus 2 tablespoons Bailey's Irish Cream

1/3 cup pistachios, blanched and chopped (more is okay)

Procedure

Lined a 9x9 pan with foil and lightly grease with butter (or use nonstick foil); set aside.

In a heavy-bottom sauce pan over low heat, combine the first 3 ingredients and stir constantly until the mixture is completely combined. Remove from heat and stir in pistachios. Pour into prepared pan and chill until set. Cut and serve.

Note: I reduced the recipe to 1/3 which worked perfectly with one bag of chips and a small airplane size bottle of Irish Cream (50ml).

Dark Chocolate and walnut fudge....

Ingredients

  • 3 C Dark Chocolate Chips
  • 1 (14 oz) can sweetened condensed milk
  • 1/4 C butter
  • 1 C chopped walnuts
  • 1/8 tsp salt
  • 1 1/4 tsp vanilla bean paste

Instructions

  1. Line an 8X8 dish with foil (I line mine horizontally and vertically so that once the fudge is chilled - I can use the foil to lift the fudge easily out of the dish for cutting. Spray the foil with cooking spray.
  2. In a large microwave safe dish (I use my 8 C glass measuring bowl) combine chocolate chips, sweetened condensed milk, butter, vanilla bean paste and salt. Microwave on half power for about 2 to 5 minutes total, until melted. Cook about 1 1/2 minutes, then stir - another 1 1/2 minutes - stir. Repeat until melted. This is not a creamy melted concoction, it's somewhat thick.
  3. Stir in Walnuts
  4. Pour this and smooth into the foil lined 8X8 baking dish; place in the refrigerator until chilled.
  5. Remove from dish, cut into bite size squares and enjoy yourself or give as a gift!
