Sweet Pepper and White Bean Soup

Ingredients

Mario Batali,,,,,,Sweet Pepper and White Bean Soup

4 cups chicken stock low sodium

1/4 cups extra virgin olive oil, plus more for serving

1 large spanish onion, jut into 1/4 inch dice

1/4 lb. pancetta, cut into 1/4 inch dice

4 fresh sage leaves

2 tblsp. tomato paste

3 red bell peppers, seeded and cut into 1/2 inch dice

2 cans of cannellini or white beans drained and rinsed (15 oz. each)

kosher salt and freshly ground black pepper

In medium pot boil chicken stock.

In Dutch oven heat oil and then add onion, sage and pancetta.

Cook 5 minutes stir frequently. Mix in tomato paste and

bell peppers and continue cooking for 2 more minutes,

stirring frequently.

Add boiling chicken stock and then blend to puree until smooth and pour back into the pot

Add the cannellini and bring to boil and reduce heat to maintain a simmer and cook 5 minutes.....serve with drizzle of oil and fresh pepper
