Molasses Crinkles

Ingredients

2 C brown sugar

1 1/2 C shortening

1/2 C molasses

2 eggs

4 1/2 C flour

4 tsp bk soda

2 tsp cinnamon

2 tsp ground ginger

1 tsp ground cloves

1/2 tsp salt

granulated sugar

Procedure

Mix brown sugar, shortening, molasses and eggs. Mix in flour, baking soda, cinnamon, ginger, cloves and salt. Cover and refrigerate for at least one hour.

Heat oven to 375 degrees. Shape dough by rounded teaspoons into balls. Flatten slightly and dip tops into granulated sugar. Place sugared balls sugared side up about 3 inches apart on a lightly greased cookie sheet. Bake until just set about 9 minutes depending on the size of the cookie. Makes about 6 dozen cookies.

Special Notes

This is the recipe doubled from the Betty Crocker's Cookbook. I would make these cookies when we would travel to the Klco cottage on Larks Lake when the kids were little. They traveled well and get better with days of being in a hot car or camper! I remember that the Clarks really liked these cookies too. We like the cookies chewy and a bit undercooked so 9 minutes is probably too long try 8-1/2 minutes. I also made these for David for his trip with Jacob Clark and other college friends to Florida - March 2012. Gotta spoil those boys and they sure can eat!
