Filet of beef with shallots and red wine

6 blocks of beef each 150g

130 g butter

Shallots 4 pieces

Red wine 20 cl – 1 wine glass full

Potatoes 400 g

10 cl milk

Olive oil 5 cl

Eplucher puis ciseler les échalotes finement.

Eplucher les pommes de terre et les couper en petit dés. Les laver à l'eau froide et les mettre dans une cocotte. Remplir d'eau froide, porter à ébullition, saler (10 g de gros sel par litre d'eau) et laisser cuire 10 minutes.

Egoutter les pommes de terre et les remettre dans la cocotte. Les écraser avec un fouet tout en incorporant 100 g de beurre. Finir avec le lait une fois tout le beurre fondu.

Dans une poêle chaude, mettre un trait d'huile d'olive et faire colorer fortement les pavés de bouf sur toutes les faces (3 minutes environ), baisser le feu au minimum, ajouter les échalotes puis faire suer 2 minutes. Déglacer avec le vin rouge. Finir la cuisson en incorporant (vaner) une noisette de beurre pour rendre le jus onctueux et brillant.

Avec un cercle en inox, dresser un peu de purée au centre des assiettes, poser un pavé de bouf dessus et repartir le jus de cuisson de la viande avec les échalotes autour.

Vous pouvez remplacer les échalotes par de l'oignon et mettre ces condiments directement dans la purée. Pour préparer à l'avance les pavés de bouf, faites les juste colorer à la poêle, puis terminer la cuisson au four (four chaud 230°c).
