Caesar Salad

Ingredients

2 heads of Romaine washed and dried

2 C croutons

1 can anchovies small

1/2 C Parmesan cheese

2 cloves garlic

salt and pepper

1 C oil (at least 1/2 EVOO)

1 raw egg

1/2 T worchester

1/3 C wine vinegar

1 1/2 to 2 T lemon juice

Procedure

Chop anchovies, crush garlic and put in oil. Break salad greens and a bowl and set aside. Crack egg in your serving bowl, put in lettuce leaves and toss till coated. Add in the following order and toss gently after each.

oil, lemon, vinegar, worchester, cheese, croutons, salt and pepper

Do at the table when ready to eat have ingredients all prepared and in separate dishes ready to go.
