Peaches Poached in Whiskey

Ingredients

1 T butter

4 cups peaches sliced (canned actually work best –rinse off any syrup)

2 T brown sugar

1 tsp vanilla

1 oz whiskey or brandy or cognac

2 T roasted pecans chopped

Procedure

  1. Melt butter in a large skillet. Add the peaches and cook for about 5 minutes on medium heat. Watch to make sure the peaches don’t get overly soft.
  2. Mix in the brown sugar and vanilla and whiskey. Simmer on medium heat for about 20 minutes till sauce has darkened.
  3. Serve over vanilla ice cream and sprinkle with roasted pecans if desired.
