Peaches Poached in Whiskey

1 T butter
4 cups peaches sliced (canned actually work best –rinse off any syrup)
2 T brown sugar
1 tsp vanilla
1 oz whiskey or brandy or cognac
2 T roasted pecans chopped
Procedure
Procedure
- Melt butter in a large skillet. Add the peaches and cook for about 5 minutes on medium heat. Watch to make sure the peaches don’t get overly soft.
- Mix in the brown sugar and vanilla and whiskey. Simmer on medium heat for about 20 minutes till sauce has darkened.
- Serve over vanilla ice cream and sprinkle with roasted pecans if desired.
