Pumpkin Cake

Ingredients

2 C sugar

1 C salad oil

4 eggs

1/2 tsp salt

2 tsp soda

1 tsp baking powder

2 tsp cinnamon

2 C pumpkin

1/4 C nuts

2 C flour

2 - 9 inch pans

Frosting:

1# powdered sugar

1/2 stick butter

8 oz cream cheese

2 tsp vanilla

Procedure

Bake at 350 degrees until tooth pick comes out clean.

Special Notes

Recipe from Patsy Lincolnhol. If you want a lighter cake you may want to separate the eggs and beat egg whites and fold them in at the end. If you do this you would cream the yolks with the sugar and oil.
