Italian Meatballs

Ingredients

1 pound lean ground beef

1/2 pound ground pork

1/4 - 1/2 pound spicy Italian sausage

2 eggs

3/4 cup Italian bread crumbs

1 tsp Italian seasonings

1/2-1 C grated parmesan cheese (the real stuff)

salt and pepper

milk to moisten

Procedure

Throw all in a bowl and mix together with your hands. Add a little milk maybe 1/2 C to moisten. You can vary the amount of spicy Italian sausage depending on how spicy you want them. When well combined make into large balls (don't over work or compact them) and bake at 350 until they are cooked through. I usually check after 20-25 minutes depending on how large you make them. Add meatballs to your prepared spaghetti sauce, simmer, and serve.

Special Notes

I really don't have a recipe and this is a guess on amounts. I usually use less spicy sausage for kids and adjust up the ground pork. I think I like to have more beef than pork so maybe buy a little over a pound of beef. I have microplaned garlic cloves into the meatball mixture too but not for kids. Vary as you wish! Enjoy. They are a niece and nephew favorite.

Watched The Chew today and they put some ricotta cheese in their meatballs.

For Abby's birthday Grandma Lincolnhol made meatballs and the sauce was 2 cups spaghetti sauce, 2 cups BBQ sauce and 1 can of Campbell French Onion soup. Nit was yummy and went over well. The recipe was from Janet McCaullife.
