Kale and Quinoa Salad

Ingredients

1 1/2 cups uncooked quinoa

1/2 cup chopped toasted pecans

1/3 bunch of chopped basil

1/2 cup dried cherries

2 celery stalks chopped

2 carrots chopped

4 cups kale chopped, no stems

1/4 cup feta

1/4 cup olive oil

1/4 cup fresh lemon juice

Kosher salt to taste

Procedure

Cook quinoa, cool. Combine all remaining ingredients and add cooled quinoa. 6 servings.
