1-2-3-4 Cake

Ingredients

1 C butter softened

2 C sugar

3 C flour

4 eggs

1/2 tsp salt

2 1/2 tsp baking powder

1 C milk

1 tsp vanilla

1/2 tsp almond flavoring

Procedure

Cream butter and sugar. Add vanilla and/or almond. Separate eggs and beat egg whites till stiff and set aside. Add yolks to butter and sugar. Sift flour (to make a lighter cake take out 1/2 C flour and subsitute cornstarch) add the baking powder and salt. Alternate adding dry ingredients and milk to egg mixture beating after each addition. Fold in egg whites.

Grease and flour pans (3 9-inch cake pans or a 9 by 13 pan). bake small cake pans for 25-10 minutes, and bake a 9 by 13 pan for 40 minutes. After baking let the cake rest about 15 minutes the take it out immediately. Cool then frost and decorate.

Special Notes

This is a basic old fashioned cake recipe that my mother (Patsy Lincolnhol) used to make simple decorated cakes for birthdays and special occasions. I think we would usually make a simple butter cream frosting.
