Peach and Tomato Salad

Ingredients

Peach and Tomato Salad

½ C balsamic vinegar

¼ C olive oil

1 T honey

6 medium ripe peaches (about 2 #) pitted and cut into wedges

2 # tomatoes cut into wedges

1 C thinly sliced red onion

1 C feta

1 C pecan halves, toasted

1/3 C torn fresh basil

Procedure

In an extra large bowl whisk together vinegar, oil, honey and ½ t each salt and black pepper. Add peaches, tomatoes, red onion, cheese and pecans. Toss to coat. Top with basil. Serve immediately. 12 cups.
