Soft Boiled Eggs: Bring a half inch of water in a pan to a boil. Add eggs, cover and cook for 6 min. and 30 seconds. Remove from heat and run eggs under cold water for 30 seconds.
Fried Egg: Use large skillet so eggs can spread. Heat pan with a little oil slowly till evenly warm. Crack eggs into a bowl and add salt and pepper. Use cold eggs straight out of refrig.
Turn the heat up to medium high and let warm until oil shimmers. Add 2 tsp of cold unsalted butter and swirl to coat pan. Gently add eggs and cover the skillet. Cook for about a minute on the burner. Remove from heat and keep covered. Let sit for about a minute. Done!
