Potato Dumplings (Gnocchi)

Ingredients

1. Boil 2 large white potatoes wrapped in foil for about 45 minutes.

2. Rub or peel off skins

3. Shred or grate or rice potatoes while hot

4. Knead hot potatoes with 1 1/2 C flour about 10 minutes

5. Roll into long hot dog but a bit thinner

6. Cut into shapes ( 3/4 inch) and pinch a divot in the center

7. Dust lightly with flour and let sit in sun to partially dry

8. Add dumplings to boiling water when they rise to the top they are done. It only takes a few minutes.

9. Top with sauce such as tomato, cheese, just butter and sour cream...whatever

Procedure

Kids like to help roll out the dough into hot dogs but much longer and a bit thinner. The divot is shallow but meant to hold sauce.

Special Notes

I should have made these more often because you kids loved to help make them and liked to eat them. The hard part is working with the HOT potato!
