Pat's Egg and Cheese Breakfast Fritata

Ingredients

Bake in 350 degree oven for 40-45 min

1/2 cup butter

3 eggs

1 cup flour

1 cup milk

1 tsp salt

1 tsp baking powder

4 cups jack cheese grated (I have always substituted 2 cups guyere & 2 cups baby Swiss so don't know how just the jack cheese tastes. I buy big blocks at Costco and grate or trader joes has packages of guyere & Swiss already grated.)

4 cups fresh spinach tightly packed

Melt butter in 7 x 11 dish. Beat eggs & add remaining ingredients. Stir until well blended. (It will be a big goey mess). Pour spinach mixture over melted butter. Bake til golden brown. Cool 10 min

Recipe from Pat Dobson. I made this in a 9 by 13 pan and did a batch and a half. It is a very rich breakfast casserole.
