Flat Bread with Carmalized Onions and Cheese

Ingredients

3 large onions thinly sliced

2 T olive oil

1 T brown sugar

2 tsp balsamic vinegar

salt and pepper

1 package feuilltee pastry (puff pastry)

6 oz Brie cheese with rind removed

6 oz mild blue cheese crumbled (or Feta)

2 T chopped fresh parsley

Procedure

Heat oil in a large frying pan on med high heat. Add onions and cook until wilted and starting to brown about 10 minutes. Add sugar, vinegar, salt and pepper. Reduce to med low heat and cook for 15-20 minutes until onions are caramelized and golden. Cool.

Flatten pastry out into a rectangle shape on a baking sheet lined with parchment paper. Spread onions over the pastry, Dot with the cheeses and sprinkle with parsley and refrigerate if not baking immediately.

Bake in 400 degree oven for 20-25 minutes until crisp. Cool for 5 mintues. Cut into 20 squares in half diagonally to make 40 triangles. Serve warm
