1 stick butter melted
2/3 C crushed saltines
1/4 C grated Parmesan
1/2 tsp basil crumbled
1/2 tsp oregano
1/2 tsp salt
1/2 tsp garlic powder
1 - 1 1/2 fish fillets
Combine saltines, cheese and all spices. Put the melted butter in the bottom a a 9 by 13 pan and dip the fish fillets in the butter. Then coat the fish with the cracker mixture. Bake the fish in a 400 degrees oven until done.
This recipe came from our neighbor Dan Schultz when we lived on Leonard Street. It is pretty fatty with the butter. Now I usually just sprinkle fish with a little BBQ seasoning and dot some butter on it and bake.
