Mexican Chicken and Rice

Ingredients

4 boneless chicken breasts cut up into bite sized pieces

1 C salsa

1 package taco seasoning (or make your own with cumin, cayanne, salt, garlic powder, etc)

2 C each water and minute rice

1 C shredded cheese - cheddar or colby jack or a spicy cheese

Procedure

Boil chicken, salsa, taco seasoning, and water. When it comes to a boil reduce heat and simmer for about 10 minutes. Stir in the rice and sprinkle with the cheese. cover and cook on low for 5 minutes till rice and chicken are done.

This recipe came out of a St. Anthony parish cookbook but I don't remember the name of the person who provided the recipe.
