Victoria's Lemon Potatoes

Ingredients

4 russet potatoes, peeled and cut in half

salt and pepper

1/3 C olive oil

2 T fresh herbs chopped

1 T lemon zest

1 T fresh lemon juice

1 tsp garlic chopped

Procedure

1. Preheat over to 450. Place olive oil, salt and pepper in a bowl. Mix to combine. Place potatoes in bowl and toss until evenly coated. Place on a single layer on sheet pan. Bale for 10-15 minute until potatoes are cooked through and browned.

2. Remove from oven. In a bowl toss with remaining ingredients. Return to oven for 5 minutes.
