Wildberry Pecan Meringue Squares

Ingredients

Crust:

½ cup butter

½ cup icing (powder) sugar

2 egg yolks

1 ¼ cup flour

Topping:

¾ cup fruit jam

2 egg whites

Pinch of cream of tartar or a pinch of salt

½ cup granulated sugar

1 cup toasted ground finely pecans

Procedure

Cream all ingredients together until smooth. Pat firmly into greased 9-inch square pan. Bake at 350º F for 12 minutes or until golden.

Spread jam over the crust while it is still warm. Beat egg whites and cream of tartar to soft peaks. Gradually add sugar, beating until stiff peaks form. Gently fold in ground pecans. Spread carefully over the jam. Bake 20-25 minutes longer, or until lightly browned. Cool completely before cutting into squares.
