Macaroni and Cheese to Freeze

Ingredients

MACARONI AND CHEESE TO FREEZE

1 LB noodles

6 T butter

4 T flour

2 t dry mustard

1/8 t cayenne

4 ½ cups chicken broth

1 ½ cups heavy cream

6 cups shredded cheddar cheese

Procedure

Cook Pasta

  • Boil pasta in 4 quarts of water and 1 T salt for about 3 min until barely soft
  • Drain and spread out pasta on a baking sheet to prevent sticking DO NOT RINSE

Sauce

  • Heat butter, flour, mustard, and cayenne in dutch oven or pan over medium heat until golden and fragrant
  • Slowly mix in broth and cream and bring to a boil
  • Simmer until slightly thickened about 15 min
  • Turn off heat and whisk in cheese until smooth

Mix

  • Combine sauce and noodles in aluminum pan
  • Cover with aluminum foil, cool to room temperature, and freeze

Topping

  • Process 2 cloves of garlic, 3-4 slices of bread, 2 T butter, & 1/4 cup Parmesan in food processor until coarsely chopped.
  • Freeze in ziplock bag

Thaw or partial thaw first, then bake at 375 for 45ish minutes covered.

Remove cover, add topping, bake another 20ish minutes.
