Fruit and Spice Granola

Ingredients

4 cups of old fashioned rolled oats

1 cup unsweetened dried coconut

1 C sliced almonds

1 C pecans

1 1/2 tsp ground cinnamon (or more)

1/2 tsp freshly grated nutmeg

1/4 tsp salt

1 stick (8 T) unsalted butter

1/2 C mild honey

2 cups dried fruit such as cranberries, cherries, bananas, currents, raisins, apricots, prunes, blueberries....

Procedure

Put racks in upper and lower thirds of oven and preheat oven to 300 degrees F. Stir together oats, coconut, nuts, spices, and salt in a large bowl. Melt butter with honey in a small saucepan over low heat, stirring occasionally. Pour butter mixture over oat mixture ant toss well to combine.

Spread granola evenly on two baking sheets coated with nonstick spray and bake stirring occasionally and switch positions of pans halfway through baking until golden brown, about 30 minutes.

Transfer granola to a large bowl, add dried fruit and toss to mix. Cool stirring occasionally, about 1 1/2 hours.

The granola keeps in an airtight container, refrigerated for up to 1 month.

Trina Hayes gave me this recipe. It is from the Gourmet Today magazine and they took the recipe form Governor's Inn in Rochester, New Hampshire. They note that it is delicious with milk, over yogurt, or all by itself. The entire recipe is 3200 calories.
