Stuffed Chicken Breasts
4 chicken breasts
2 diced apples
seasoned bread crumbs (enough to coat apple chunks)
1/4 cup shredded cheddar cheese
pepper and garlic powder to taste
light wine or apple juice
In a bowl, mix diced apples, bread crumbs, and shredded cheddar cheese. Slice the chicken breasts to make a "pocket." Fill each breast with a portion of the apple stuffing. Place in a hot skillet with a little oil. Season to taste with pepper and garlic powder. Brown the meat, then simmer. Add wine or apple juice and let it cook down into a sauce.
