Salmon Stuffed Tomatoes

Ingredients

25-30 cherry tomatoes

1 package thinly sliced smoked salmon (4 thin slices)

1 three-ounce pkg. cream cheese at room temp

1 tsp lemon juice

1 T minced watercress leaves (or other green)

Salt and pepper to taste

Watercress sprigs for garnish

Procedure

  1. Cut a thin slice from stem end of each tomato. Scoop pulp and seeds from center with a small sharp edge spoon –grapefruit spoon.
  2. Turn tomatoes cut side down on paper towels to drain.
  3. Chop smoked salmon very fine. In a medium bowl, stir cream cheese until smooth. Stir in chopped salmon, lemon juice and 1 T minced watercress.
  4. Sprinkle insides of drained tomatoes with salt and pepper. Fill each tomato with salmon mixture and top with a small sprig of watercress.
