Eggplant Rollups

Ingredients

1 jar spaghetti sauce

1 can diced tomatoes

Italian spices

mozerella cheese

goat cheese

parmesan cheese

2 large eggplants slice 1/4 inch thick

assorted veggie such as...

onion

zucchini

mushrooms

Procedure

Cut eggplant into 1/4 inch wide slices the long way. Brush eggplant with olive oil and bake in oven for about 20 minutes until pliable. Saute finely chopped veggies and set aside to cool. Mix together the spaghetti sauce and the diced tomatoes and add a little Italian spices. Cover the bottom of a 9 by 13 pan with a little of the spaghetti sauce mixture. Place a scoop of veggies, some goat cheese and some mozarella cheese on an eggplant slice and roll up. Place filled and rolled eggplants on the sauce and cover with the remaining sauce. Sprinkle all with parmesan cheese. Bake until warmed through about 30 minutes at 350 degrees.
