It is used to express something happens suddenly while doing something, or something happens and you're in trouble

It cannot be used with verbs that describe the state of the object or person. For examples,

×学生の最中に彼女に会った。

がくせいのさいちゅうに、かのじょにあった。

When I was a student, I met her.

×日本に住んでいる最中に、寿司を食べた。

にほんにすんでいるさいちゅうに、すしをたべた。

I ate sushi when I lived in Japan.
