1 croissant, sliced in half
100g cream cheese
150g ricotta cheese
1 tsp vanilla bean paste or extract
½ cup honey
50g butter
Fresh lavender flowers
Fresh thyme leaves
Prepare the Whipped Ricotta: Combine the ricotta, cream cheese, and vanilla paste in a food processor. Blend for 30 seconds to 1 minute until the mixture is light and fluffy. Transfer the whipped ricotta into a piping bag.
Toast the Croissant: Gently toast the cut side of the croissant under a grill or broiler until lightly golden. Allow it to cool slightly.
Assemble the Croissant: Place the toasted croissant halves on serving plates. Pipe the whipped ricotta onto each half in a decorative pattern.
Make the Burnt Honey Caramel: In a small pot, melt the butter over medium heat until it begins to bubble and slightly darken. Add the honey and allow it to bubble for a couple of minutes until it darkens in color. Remove from heat.
Finish the Dish: Carefully drizzle the hot burnt honey caramel over the whipped ricotta. Garnish with fresh lavender flowers and thyme leaves. Let the honey cool for a minute or two before serving.
