1 lb ground chicken
1/3 cup almond flour or finely chopped dry-roasted nuts (optional)
1/4 cup fresh parsley, chopped
2 tsp fresh dill, chopped
3 cloves garlic, minced
1/4 cup feta cheese, crumbled
1/2 tbsp onion powder (or finely chopped scallion or red onion)
2 tsp dried oregano
1 tsp ground cumin
1/2 tsp salt
1/2 tsp freshly cracked black pepper
Zest of 1 lemon
1 tbsp extra virgin olive oil
For the Lemon Orzo:
1 cup orzo pasta
2 cups low-sodium chicken broth
Juice of 1 lemon
2 tbsp extra virgin olive oil
1/4 cup crumbled feta cheese
