Pulled Pork (serves ~6):
1 (4‑lb) pork shoulder roast
2 tsp coarse salt
1 tsp black pepper
1 tbsp neutral oil (canola/vegetable)
1/3 cup beer (or substitute)
2 chopped chipotle peppers in adobo
3 tbsp adobo sauce
3 tbsp peach preserves
Brioche buns, for serving
Quick Pickled Peaches:
¾ cup apple cider vinegar
¾ cup water
½ cup sugar
2 tsp kosher salt
1 tsp crushed red pepper flakes
1 tsp whole black peppercorns
Napa Cabbage Slaw:
2 cups chopped napa cabbage
¼ cup chopped fresh cilantro
Juice of 1 lime
1 tsp olive oil
Salt and pepper, to taste
Sear the Pork (optional but recommended):
In a hot skillet, heat oil over medium–high heat. Season pork with salt and pepper and brown all sides until golden. Transfer to a slow cooker (or continue in the pot).
Slow-Cook:

Finish the Pork:
