For the Pie:
8 sheets of phyllo dough
1 cup (2 sticks) unsalted butter, melted
1 cup semolina flour
3 large eggs
¾ cup granulated sugar
2 cups whole milk
1 tsp ground cinnamon
½ tsp ground nutmeg
Pinch of salt
For the Topping:
½ cup honey, warmed
2 tbsp sesame seeds, toasted
Preheat the Oven: Set your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
Prepare the Phyllo Layers: Lay one sheet of phyllo dough in the prepared dish and brush generously with melted butter. Repeat with 6 more sheets, layering them on top of each other.
Prepare the Filling: In a mixing bowl, whisk together the semolina, eggs, sugar, milk, cinnamon, nutmeg, and salt until smooth.
Assemble the Pie: Pour the semolina mixture over the phyllo base, spreading it evenly. Top with the remaining phyllo sheet, brushing each layer with melted butter.
Bake: Bake in the preheated oven for 40–45 minutes, or until the top is golden brown and the filling is set.
Cool and Serve: Allow the pie to cool for 10 minutes. Drizzle with warmed honey and sprinkle with toasted sesame seeds. Slice and serve warm or at room temperature.
