4 salmon fillets (5–6 oz each)
1 tablespoon olive oil
Salt and pepper, to taste
1 teaspoon garlic powder
2 tablespoons unsalted butter
6 cloves garlic, minced
½ cup chicken broth
1½ cups heavy cream
½ cup grated Parmesan cheese
2 tablespoons freshly chopped parsley
Juice of ½ lemon
Prepare the Salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt, pepper, and garlic powder.
Sear the Salmon: Heat olive oil in a large non-stick skillet over medium-high heat. Add the salmon fillets, skin-side up, and cook for 4–5 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
Make the Garlic Butter Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add Liquids: Pour in the chicken broth and bring to a simmer. Let it cook for about 2 minutes, scraping up any browned bits from the bottom of the skillet.
Add Cream and Parmesan: Stir in the heavy cream and bring the mixture to a gentle simmer. Cook for 3–4 minutes until the sauce thickens slightly. Add the grated Parmesan cheese and stir until melted and smooth.
Finish the Dish: Return the salmon fillets to the skillet, spooning the sauce over the top. Cook for an additional 2–3 minutes to heat the salmon through.
Garnish and Serve: Sprinkle the chopped parsley over the salmon and squeeze fresh lemon juice on top. Serve immediately with your choice of sides.
