• 1 lb (≈450 g) ground beef
• 1 medium onion, diced
• 3 garlic cloves, minced
• 1 lb (12 oz / ≈340 g) rigatoni pasta
• 1 cup beef broth
• 2 tbsp tomato paste
• 2 tbsp olive oil
• 1 tsp Italian seasoning
• ½ tsp red pepper flakes (optional)
• Salt & freshly ground black pepper, to taste
• 2 cups heavy cream
• 1 cup grated mozzarella cheese
• 1 cup grated Parmesan cheese
• Fresh parsley or basil, chopped for garnish
Bring a large pot of salted water to a boil. Cook rigatoni until al dente according to package instructions. Drain and set aside.
Meanwhile, heat olive oil in a large skillet over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned and fully cooked through. Remove beef and set aside.
In the same pan, sauté the diced onion for 3–4 minutes until softened. Add garlic and cook another 1–2 minutes until fragrant.
Stir in tomato paste, Italian seasoning, and red pepper flakes (if using). Pour in beef broth and scrape up browned bits from the skillet. Simmer briefly.
Reduce heat to low and stir in heavy cream, Parmesan, and mozzarella. Let sauce simmer for about 5 minutes, stirring until thickened and cheese is melted.
Return cooked beef to the pan and add drained rigatoni. Toss everything together until the pasta is fully coated with creamy sauce. Simmer an additional 2–3 minutes. Add splash of reserved pasta water if sauce is too thick.
Sprinkle with chopped parsley or basil, and serve hot with extra Parmesan on the side.
