1 pound ground sausage (pork, chicken, or turkey)
2 large onions, thinly sliced
2 tablespoons olive oil
1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
Salt and pepper to taste
1 package of puff pastry (2 sheets)
1 egg, beaten (for egg wash)
Optional:
½ cup grated Gruyère cheese
1 tablespoon Dijon mustard
Caramelize the Onions: In a large skillet, heat olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes. If they start to stick, add a splash of water to deglaze the pan.
Prepare the Filling: In a mixing bowl, combine the ground sausage, caramelized onions, thyme, salt, and pepper. If using, add the Dijon mustard and grated Gruyère cheese. Mix until well combined.
Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface to about 1/8 inch thick. Cut each sheet into rectangles, approximately 4×6 inches.
Assemble the Rolls: Place a generous amount of the sausage mixture along one edge of each pastry rectangle. Roll up the pastry tightly around the filling, sealing the edge with a bit of the beaten egg.
Bake: Place the rolls seam-side down on the prepared baking sheet. Brush the tops with the remaining beaten egg. Bake for 20-25 minutes, or until the pastry is golden brown and puffed.
