1 lb lean ground beef
2 Tbsp butter
1 small yellow onion, diced
1 small green bell pepper, diced
8 oz brown mushrooms, minced
2 Tbsp ketchup
1 Tbsp Worcestershire sauce
½ tsp kosher salt
½ tsp fresh ground black pepper
1 Tbsp cornstarch
1 cup beef broth
8 oz provolone cheese, chopped (or 6 oz for lighter cheesiness)
6–8 brioche or hamburger buns
Brown the beef: Heat a large skillet over medium-high heat. Add ground beef and cook until about 50% browning forms a crust, then break up the meat and finish cooking. Remove and set aside .
Sauté veggies: In the same skillet, melt butter, then add onions, bell pepper, and mushrooms. Brown without stirring for 1–2 minutes, then stir and brown another 1–2 minutes.
Combine: Return beef to skillet. Whisk together beef broth and cornstarch, then add it with ketchup, Worcestershire sauce, salt, and pepper. Cook 3–5 minutes until sauce thickens.
Melt cheese & serve: Remove from heat and stir in provolone until melted. Optionally toast buns with butter. Spoon mixture onto buns and serve immediately.
