For the Poached Apricots:
9 oz (250g) soft dried apricots (preferably Turkish)
2/3 cup granulated sugar
1 tbsp fresh lemon juice
2 scant cups (15 oz) hot water
For the Filling:
4 1/2 oz (heaping 1/2 cup) whole milk ricotta cheese
2 tbsp finely chopped unsalted pistachios
Prepare the Syrup:
In a medium saucepan, combine the sugar and hot water. Stir over medium-high heat until the sugar dissolves.
Add the lemon juice and bring the mixture to a boil.
Reduce the heat to a simmer and cook for 5–7 minutes to slightly thicken the syrup.
Poach the Apricots:
Add the dried apricots to the syrup and simmer for 10–15 minutes, or until they become plump and tender.
Remove the apricots from the syrup and set aside to cool.
Continue simmering the syrup until it thickens to a light, pourable consistency.
Stuff the Apricots:
Once the apricots have cooled, gently slit them open and remove the pit.
Fill each apricot with a spoonful of ricotta cheese, slightly overstuffing them.
Sprinkle the chopped pistachios over the ricotta filling.
Serve:
Arrange the stuffed apricots on a serving platter.
Drizzle the reduced syrup over the apricots.
Garnish with additional chopped pistachios, if desired.
