For the filling
2 Tbsp unsalted butter, melted
4 cups shredded rotisserie chicken
1 (15 oz) bag frozen mixed vegetables
1 tsp fresh thyme, chopped (plus more for garnish)
¾ tsp freshly ground black pepper
¼ tsp kosher salt (or to taste)
1 (10.5 oz) can condensed cream of chicken soup
1 ½ cups chicken broth
½ cup heavy whipping cream
For the biscuit topping
1 (11 oz) box Red Lobster Cheddar Bay Biscuit mix
½ cup shredded sharp cheddar cheese
¾ cup cold water (or milk, per box instructions)
