12 oz (340 g) egg noodles, uncooked
2 tsp olive oil
1¼ lb (≈ 570 g) lean ground beef (90% lean)
1 medium onion, finely chopped
2 tsp minced garlic
Salt & pepper, to taste
16 oz (1 pint / 454 g) tomato sauce
15 oz (1 can) diced tomatoes, drained
2 tsp Italian seasoning
2 cups shredded cheddar cheese (divided)
2 Tbsp chopped fresh parsley (optional, for garnish)
Preheat oven to 400°F (200 °C). Grease a 9×13″ baking dish.
Cook egg noodles in salted boiling water until al dente; drain and set aside.
In a large skillet over medium-high, heat olive oil. Add ground beef, onion, and garlic. Cook ~4–5 min until beef is browned and onion softened; season with salt & pepper.
Stir in tomato sauce, drained diced tomatoes, and Italian seasoning; simmer until heated through.
Combine beef mixture with cooked noodles in the skillet or baking dish; stir in 1 cup cheddar cheese.
Transfer to prepared dish, sprinkle remaining 1 cup cheddar over top. Bake 10–15 min until cheese is melted and bubbly.
Garnish with parsley if desired; serve warm.
