• 1–2 boneless, skinless chicken breasts (about 1 to 1.5 lb), each sliced horizontally into 2 thin cutlets (4 pieces total)
• 1 egg, lightly beaten (or ¼ cup mayonnaise mixed with minced garlic/onion powder)
• ⅓ cup Panko breadcrumbs
• ⅓ cup freshly grated Parmesan cheese
• ½–1 tsp garlic powder
• 1 tsp dried oregano or Italian seasoning
• Salt and freshly ground black pepper, to taste

Pat the chicken cutlets dry, then season both sides lightly with salt and pepper.
