For the Crispy Cod:
4 fresh cod fillets (about 6 oz each)

½ cup cornstarch

1 cup cold sparkling water
Additional flour (for dredging)
For the Golden Onion Rings:
1 large sweet onion, sliced into ½-inch rings
½ cup buttermilk
