4 ears of corn
2 peaches, sliced or diced
¼ cup red onion, finely chopped
3 Tbsp cilantro, chopped
1 medium jalapeño, deseeded (optional, to taste)
1 large avocado (optional, but commonly included)
3 tsp honey
3 Tbsp lime juice
Salt & black pepper, to taste
Prep produce. Shuck the corn and cut kernels off the cobs. Slice or dice the peaches, finely chop the red onion and cilantro, and deseed and chop jalapeño if using.
Combine ingredients. In a large bowl, add the corn kernels, peaches, red onion, cilantro, and jalapeño. If using avocado, gently fold that in too.
Dress the salad. In a small bowl, whisk together the honey, lime juice, salt, and black pepper. Pour over the salad and toss gently to coat.
