Ingredients
6 medium-sized russet potatoes, peeled and diced
1 medium onion, finely chopped
3 cloves garlic, minced
4 cups chicken or vegetable broth
1 cup heavy cream
2 tbsp unsalted butter
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
½ tsp dried thyme
½ tsp dried rosemary
2 bay leaves
1 cup shredded cheddar cheese (optional)
¼ cup chopped fresh parsley for garnish
4 slices bacon, cooked and crumbled (optional)
Directions
In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
Stir in minced garlic and cook for 1–2 minutes, until fragrant.
Add diced potatoes and stir to coat with the onion-garlic mixture.
Pour in broth, add bay leaves, thyme, rosemary, salt, and pepper. Stir well.
Bring to a boil; reduce heat, cover, and simmer for 20–25 minutes, until potatoes are fork-tender.
Remove bay leaves. Blend with an immersion blender until desired consistency—blend half for a chunkier texture.
Stir in heavy cream and butter until smooth.
