This One Pan Coconut Lime Chicken is a creamy, zesty, and quick-to-make dish. Boneless chicken thighs are pan-seared and then braised in coconut milk, which results in a tender and flavorful meal. Ingredients:
For the Chicken:
8 boneless, skinless chicken thighs
2 tsp sea salt flakes
1 tsp ground black pepper
1 tbsp flour (use gluten-free flour if needed)
1 tsp sweet paprika (optional)
1 tbsp coconut oil
1 tbsp olive oil or rapeseed oil
2 tbsp lime juice
3 garlic cloves, minced
1 tbsp minced ginger
1 green jalapeño, finely diced
2 shallots, finely diced
1 tbsp tomato paste
1 tsp Sriracha (or more to taste)
2 tbsp light soy sauce
14 oz (400 g) coconut milk (full-fat)
3 tbsp coconut cream (optional)
Zest of 1 lime
For Serving:
2 tbsp salted peanuts, roughly chopped
5 spring onions, finely diced
Red pepper flakes (optional)
Fresh cilantro (coriander), chopped

Directions:
Prepare the Chicken: Trim the chicken thighs of excess fat and pat dry. Season with salt, pepper, paprika (if using), and lightly dust with flour.
Pan-Seer the Chicken: Heat coconut oil and olive oil in a large pan over medium-high heat. Sear the chicken thighs for 5-7 minutes per side until golden. Transfer the chicken to a plate.
Make the Sauce: Add lime juice to the pan to deglaze and loosen any browned bits. Reduce the heat and add garlic, ginger, jalapeño, and shallots. Stir for a couple of minutes, then add tomato paste, Sriracha, and soy sauce.
Braise the Chicken: Pour in the coconut milk and coconut cream. Stir well and return the chicken to the pan. Add lime zest, cover with a lid, and simmer on low for 10-15 minutes, or until the chicken is cooked through.
Serve: Garnish with chopped spring onions, peanuts, cilantro, and red pepper flakes if desired. Serve with lime wedges and enjoy!
