Breakfast Totchos are a fun and hearty twist on traditional nachos, replacing tortilla chips with crispy tater tots. This dish combines the classic flavors of bacon, eggs, and cheddar cheese, all baked together for a satisfying morning meal. Perfect for weekends or brunch gatherings, these totchos offer a comforting and shareable option that both kids and adults will enjoy. Customize the number of eggs to suit your family's needs, and consider adding optional toppings like green onions, sour cream, or salsa to enhance the flavor.
1 lb frozen tater tots
6–8 strips of bacon, cooked crisp and crumbled
1½–2 cups shredded cheddar cheese
6–8 large eggs
Salt and pepper, to taste
Thinly sliced green onions, for garnish (optional)
Preheat Oven: Set your oven to 400°F (200°C).
Prepare Tater Tots: Arrange a single layer of frozen tater tots in a 12-inch cast iron skillet.
Layer Ingredients: Evenly distribute the crumbled bacon over the tater tots, followed by the shredded cheddar cheese. Season with salt and pepper to taste.
Create Wells for Eggs: Using a spoon, make 6–8 wells in the mixture, depending on how many eggs you plan to use.
Add Eggs: Carefully crack an egg into each well, ensuring not to break the yolk.
Bake: Place the skillet in the preheated oven and bake for 22–25 minutes, or until the egg whites are opaque.
Rest and Serve: Remove the skillet from the oven and let it rest for 5 minutes. Garnish with sliced green onions if desired. Slice and serve warm.
