Dubai Cookies have taken TikTok by storm as the buttery, fudgy chocolate cookie stuffed with a pistachio cream and kataifi filling. Inspired by the viral Dubai chocolate bars from Fix Dessert Chocolatier, they offer a textural journey—crisp exterior, gooey chocolate, and a surprise green nut‑and‑filo center. These treats combine brown butter or chocolate cookie dough with creamy pistachio, shredded kataifi pastry, and melty chocolate chips for a truly indulgent bite. Perfect for pistachio lovers or those craving something over-the-top, they're surprisingly doable at home once you source the filling components.
1 cup unsalted butter, browned
½–¾ cup brown sugar
¼ cup granulated sugar
2 large eggs
2 tsp vanilla extract
2 cups all-purpose flour
½ tsp baking soda
½ tsp salt
1 cup chocolate chips (semi‑sweet or milk)
½ cup pistachio cream or butter
~½ cup shredded kataifi pastry, toasted/crisped
Optional: a pinch of flaky sea salt for topping
Prepare brown butter cookie dough: Brown butter in a saucepan; let cool slightly. In a bowl, mix browned butter with brown and granulated sugars until creamy. Add eggs and vanilla, mixing well. Stir in flour, baking soda, and salt until just combined. Fold in chocolate chips.
Make filling: In a small bowl, combine pistachio cream with toasted kataifi until coated thoroughly.
Assemble cookies: Flatten a portion of dough into a disc (~2 Tbsp). Place about 1 Tbsp of pistachio-kataifi filling in center. Cover with another portion of dough and seal edges, shaping into a ball so the filling is enclosed.
Bake: Preheat oven to 350°F (175°C). Place balls on lined baking sheet, 2" apart. Bake for 10–12 minutes, until edges are golden but centers still soft.
Finish: Let cookies cool slightly on pan before transferring to a rack. Optionally sprinkle with flaky sea salt or drizzle melted chocolate over top for extra flair.
