1 (16 oz) box of pasta (your choice of shape)
1–2 lemons, juiced
¼ cup olive oil
1 cup mini cucumbers, diced
1 red onion, diced
¼ cup crumbled goat cheese
1 tablespoon oregano
½ teaspoon garlic powder
Salt & pepper, to taste
Cook the Pasta: Boil pasta according to the package instructions. Once cooked, drain and allow to cool for 10–15 minutes.
Prep the Veggies & Cheese: While the pasta cools, dice the cucumbers and red onion. Add them to a large mixing bowl and crumble the goat cheese over them.
Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, oregano, and garlic powder.
