Hamburger Steaks
Creamy Dill Sauce
1 Tbsp olive oil
1 Tbsp unsalted butter
1 small onion, finely chopped
2 garlic cloves, minced
1 tsp salt
1 tsp black pepper
2 Tbsp all-purpose flour
½ cup low-sodium chicken broth
1 cup heavy cream
2 Tbsp fresh dill, plus more for garnish
Make patties: In a bowl, combine grated onion, ground beef, breadcrumbs, salt, pepper, cream, and egg. Gently mix until just combined. Divide into 4 portions, shape into balls, then flatten to about ¾″ (2 cm) thick.
Sear patties: Heat oil and butter in a skillet over medium. Cook patties 4–5 minutes per side until golden. Remove and set aside.
Cook aromatics: In the same skillet (reduce heat to low), sauté chopped onion and garlic ~2 minutes until fragrant. Season with salt and pepper .
Thicken sauce: Sprinkle in flour, stirring to coat. Pour in broth and simmer ~2 minutes, scraping brown bits from the pan.
Finish sauce: Stir in heavy cream and chopped dill; bring to a gentle boil and simmer 1–2 minutes until the sauce slightly thickens.
Rewarm patties: Return patties to the skillet; simmer 5–6 minutes until heated through and cooked to your preference.
Garnish & serve: Sprinkle with extra dill and freshly ground black pepper. Serve hot alongside mashed potatoes, rice, pasta, or crusty bread.
