4 salmon filets (about 6 oz each)
Salt and pepper to taste
1 tsp olive oil (for searing)
1 cup 2% milk
1 tbsp cornstarch
2 tbsp butter (or use garlic butter if available)
2 garlic cloves, minced
¼ cup sun-dried tomatoes, chopped
1 cup cherry tomatoes, halved
2 cups fresh spinach, chopped
½ cup grated Parmesan cheese
Salt and pepper to taste
Cooked whole-wheat linguine or pasta of choice
Cook the Salmon:
Heat olive oil in a skillet over medium heat. Season salmon with salt and pepper. Place salmon skin-side down and cook for about 5 minutes until golden. Flip and cook for another 2 minutes. Cover with a lid to finish cooking (internal temp 145°F). Remove and set aside.
Make the Sauce Base:
