1 block extra firm tofu
4 slices vegan ham
4 slices vegan cheese
1 cup all-purpose flour
1 cup unsweetened non-dairy milk
1 tbsp apple cider vinegar
1 cup breadcrumbs
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
Salt and pepper to taste
2–3 tbsp oil for pan frying
Press the tofu for at least 30 minutes to remove excess moisture. Slice it lengthwise into 4 thin slabs.
Slice each slab open horizontally to create a pocket.
Stuff each pocket with one slice of vegan ham and cheese.
In a small bowl, mix non-dairy milk with vinegar and let sit for 5 minutes to create vegan buttermilk.
Prepare three bowls: one with flour, one with the vegan buttermilk, and one with breadcrumbs mixed with spices.
Dredge each stuffed tofu piece first in flour, then in buttermilk, and finally in the seasoned breadcrumbs.
Heat oil in a pan over medium heat and fry each tofu cordon bleu until golden brown on both sides, about 4–5 minutes per side.
Transfer to a paper towel-lined plate to remove excess oil.
Serve warm with your favorite sides.
