Key West Grilled Chicken is a vibrant and flavorful dish that brings the tropical tastes of lime, honey, and cilantro together in a simple marinade. This recipe is quick to prepare, making it perfect for weeknight dinners or weekend cookouts. The marinade infuses the chicken with a balance of sweetness, acidity, and savory notes, resulting in a juicy and tender grilled chicken that's both satisfying and refreshing.
4 boneless, skinless chicken breast halves
3 tablespoons soy sauce (or coconut aminos for a gluten-free option)
2 tablespoons honey
1 tablespoon vegetable oil
Juice of 1 lime
2 cloves garlic, minced
1/4 cup fresh cilantro, chopped
1/4 cup red bell pepper, finely chopped
Salt and pepper to taste
Prepare the Marinade: In a bowl, whisk together the soy sauce, honey, vegetable oil, lime juice, minced garlic, chopped cilantro, and red bell pepper. Season with salt and pepper to taste.
Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably up to 2 hours, to allow the flavors to meld.
Preheat the Grill: Preheat your grill to medium-high heat.
Grill the Chicken: Remove the chicken from the marinade and discard the marinade. Grill the chicken for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
Serve: Remove the chicken from the grill and let it rest for a few minutes before slicing. Serve with your favorite sides, such as grilled vegetables, rice, or a fresh salad.
